Simple mistake - the folder that was set to hold the default config files in Hyper-V settings (right click the VM Hyper-V host in Hyper-V manager and choose Hyper-V settings, the first option) was missing somehow.

I chose a suitable folder for the files and this issue disappeared 🖐
