Anyway in order to solve this I have to do a work around.

You can find out what keyboard you are currently using by pressing the Windows Button + [SPACE] bar.

Which should show this at the edge of the screen:

As you can see, the US keyboard remains even when the UK region is the only one remaining, and so the option we have used as a workaround is top install the English\Irish keyboard so that we can switch to that with Windows Button + SPACE which has the correct " and @ assigned keys.

But I'm sure the Irish will soon be swapping over to the US version anyway... 👻
