So in the end I downloaded 7-zip portable and unzipped the HP full download for the 7720 Pro printer to a location on my computer. I then went into the printer driver wizard, added the printer by it's IP address and pointed the driver installer browse dialogue box at the location I had saved the files. I could then choose the 7720 Pro as a printer driver and was able to successfully print a test page to the printer.
