I am going to try: Press Win + R to start "Run", type "excel.exe /safe" in the blank box, press Enter. And will post the results...

We seem to have remedied this issue by running the O365 updates as the admin with everyone else logged out and then restarting the box afterwards. We no longer see the error above.
